THE SEASONING

Fresh Parmigiano Reggiano

(12/16 months-seasoning)

This kind of cheese is perfect when cooking baked dishes or preparing sauces. It can also be cut in slices and eaten with thinly-sliced raw meats (carpaccio), cold pork meats or salads; this level of seasoning, in fact, exalts tastes, instead of covering them up

Medium-seasoned Parmigiano Reggiano

(more than 18 months)

Together with its strong lactic flavour, vegetal notes of grass, vegetables, flowers and fruits can be appreciated. To exalt its taste, it can be cut into small cubes and served with aperitifs, white and dry wines or fruits like pears and green apples

Seasoned Parmigiano Reggiano

(more than 22 months)

During the long seasoning, aroma become stronger, the cheese more tasty and sweet, and the body more granular and crumblier. Its taste can be appreciated with red, structured wines. It can be cut into slices and served with fruit-salads and traditional Modenese balsamic vinegar. It goes well with any dried fruit, especially with dried figs and prunes.

Mature Parmigiano Reggiano

(more than 30 months)

This kind of cheese is particularly rich in nutritional elements, more dry, crumbly and granular. It has a stronger flavour and shows notes of spices and dried fruit.
Since it has an extremely marked taste, it goes well with red, structured wines, as well as with white passito wines and raisin wines.

THE CUTTING

The average Parmigiano-Reggiano wheel is about 24 cm (9.4 in) high, 45 cm (18 in) in diameter and weighs 38KG (84 lb).
Some wheels are sold as whole although most of them are sold in wedges.

Half-wheel or portions of them are the most common ones but also small shavings can be sold for, as an example, vending machine distributors or as “ready to eat” tastes.

It’s part of the common Italian diet. Given many of us are living in a hurry world, we often need light and easily digestible food. In fact, 100 gr. of cheese can be digested in 45 minutes, whereas 4 hours are required for our stomach to digest 100 gr. of meat or fish.
